Sweet Potato Pizza (Hearts)

Sweet Potato Pizzas are a nutritious, easy, and tasty alternative to using pizza dough. You can add any toppings you’d like to your sweet potato rounds.

Ingredients

  • sweet potatoes
  • avocado oil, or oil of choice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

You may use any toppings you’d like. Here I used the following:

  • hummus
  • finely diced spinach
  • shredded mozzarella cheese
  • red bell pepper

Instructions

  1. Preheat the oven to 400F.
  2. Scrub clean the sweet potato. Note: if using a cookie cutter, be sure to use a sweet potato that is larger than your cookie cutter.
  3. Peel the skin off from the sweet potato and cut the ends off. Slice the sweet potato, making sure the slices are uniform in size and not too thick so it cooks quickly and evenly. Drizzle some oil ( I used avocado oil) over the sliced sweet potatoes. Add 1/4 teaspoon each of garlic powder and onion powder. Toss to coat evenly.
  4. Line a baking sheet with unbleached parchment paper and place the sweet potatoes on the baking sheet in a single layer.
  5. Remove the seeds and ribs from a red bell pepper. Use a smaller heart-shaped cookie cutter to form some hearts or can small dice the bell peppers.
  6. Place the red bell pepper hearts on the baking sheet with the sweet potatoes.
  7. Make sure the sweet potatoes and the red bell peppers are not overlapping or touching one another.
  8. Roast them in the oven for 15-20 minutes (depending on the thickness of your sweet potatoes) or until the sweet potatoes are fork tender (meaning a fork can easily pierce through the sweet potato).
  9. Allow the sweet potatoes to cool. Once cooled, use a heart shaped cookie cutter to form the sweet potatoes into hearts. Add desired toppings. I spread some hummus, sprinkled some finely diced spinach (can also add some finely diced basil), topped it with some shredded mozzarella cheese, and garnished it with the roasted red bell pepper hearts
  10. Place it back in the oven for 5 minutes or until the cheese has melted
  11. Allow it to cool and enjoy!
