This Roasted Tomato Butternut Squash sauce recipe is such a tasty and easy way to serve butternut squash. I’ve also added nutritious and hidden produce like carrots, tomatoes, and red bell peppers for flavor and extra nutrients.

Ingredients

  • 2 cups butternut squash cut into about 1/2 inch cubes
  • 3 cups tomatoes cut into big chunks
  • 1/2 cup carrots diced into chunks
  • 1/2 cup onion diced into chunks
  • 4 garlic cloves, cloves washed and keep the outer peel on
  • 1/2 cup red bell pepper, cut into chunks
  • 1/2 teaspoon Italian seasoning
  • 1 1/2 teaspoons salt
  • 1/4 cup avocado oil
  • 1 1/2 cups low sodium chicken broth
  • 1/4 cup packed basil, chopped
  • 1 pound uncooked pasta

Instructions

  1. Preheat oven 425F
  2. You might only need the top half of the butternut squash. Peel the skin off and cut the squash into about 1/2 inch cubes. Measure 2 cups and add it to a bowl, along with the tomatoes, carrots, onions, red bell peppers, garlic cloves (leave the peel on), Italian seasoning , and salt. Add the avocado oil and toss to evenly coat. Note: cut the produce into relatively same-sized pieces so they cook evenly.
  3. 📝 Note: rinse the garlic cloves with water and keep the garlic cloves with the peel still on. This will help prevent the garlic from burning. Also, the garlic will become soft and will offer a nice flavor.
  4. Transfer the squash mixture to a greased 9×13 baking dish. I used a ceramic nonstick pan. Roast in the oven (uncovered) for about 30 minutes or until butternut squash is fork tender. Allow to sit to cool a bit.
  5. Carefully remove the garlic from its peel by squeezing at one of its ends. This will allow the garlic to easily come out.
  6. Transfer the vegetables to a blender. Also add chopped basil and chicken broth. Blend till smooth. Taste for salt, add more if desired.
  7. Cook pasta according to package instructions or until it’s at your desired likeness.
  8. Drain pasta and place pasta back into its pot. Pour some or all of the sauce over the cooked pasta and mix.
  9. Cover with its lid and let it sit for about 5 minutes or more.
  10. 📝Note: the sauce might look a lot when poured over the cooked pasta. May reserve some of the sauce to use for later.
  11. I like to use all of the sauce. I let it sit for 15-30 minutes to allow the pasta to absorb most of the sauce.
  12. When serving, may add some sour cream for more creaminess and flavor.
