This is a quick and easy meal that comes together in one-pot. The pasta is cooked with all of the ingredients rather than it being boiled separately on its own. First the ground meat is sauteed with come onions and garlic. Then, the tomatoes are added and cooked until soft. Next, additional ingredients are added for some flavor like the marinara sauce, basil, and parmesan cheese. Finally, the finely diced spinach is added as part of our leafy green (or may substitute it with some finely diced kale).
PrintOne-Pot Creamy Tomato Spinach Pasta
A quick and easy meal where the ground meat, uncooked pasta and additional ingredients are all cooked in is one-pot.
- Prep Time: 10
- Cook Time: 30
- Total Time: 40 minutes
Ingredients
- 1 pound ground turkey or ground beef
- 1/2 large onion, diced
- 1 tablespoon minced garlic
- 1 cup grape tomatoes, quartered (helps minimize cook time)
- 28 ounces marinara sauce
- 1/2 cup basil leaves, diced
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 3 cups water
- 1 pound uncooked pasta, I used rotini pasta
- 1/2 cup grated Parmesan cheese
- 1 cup spinach or 1 medium/large kale, finely diced
Instructions
- Heat a large pot and add the ground turkey . Cook until the pink isn’t visible. Add the diced onions and minced garlic. Cook until the meat has fully cooked through.
- Add the quartered grape tomatoes and cook (stirring frequently while mashing the tomatoes) until it has softened, about 5 minutes.
- Add the marinara sauce, diced basil, heavy cream, salt, and ground black pepper. Mix to combine. Add the pasta and water. Mix to combine.
- Bring it to a boil , give it a good mix, make sure the pasta is submerged in the liquid, cover it with a lid, lower the heat to medium-low or to where there’s a low boil. Cook for 15 minutes, stirring it a few times along the way so the pasta doesn’t stick to the bottom.
- Add the finely diced spinach and Parmesan cheese. Mix to combine. Cover with a lid and cook for 5 more minutes.
- Turn the heat off and let it sit for 15 minutes or longer. The longer it sits, the softer the pasta will become. (I let mine sit for 30 minutes)
