This recipe has a bit of a milder flavor compared to that of its original recipe. I have decreased the ingredients a bit for both the pineapple and the banana. It is results into a flavorful and refreshing treat.

Ingredients

Units Scale
  • 1/2 of a ripe frozen banana, can use frozen or fresh
  • 1 1/2 cups frozen mango chunks
  • 1/2 cup frozen pineapples chunks

Instructions

  1. Add all the ingredients to a food processor.
  2. Blend for about 1-2 minutes (while scraping down the sides-when needed) or until it’s smooth and combined.
  3. Transfer the nice cream to a glass food storage container that’s freezer safe and let it sit in the freezer for 2 hours or more. This will allow it to firm up even more (the longer it sits the firmer it will become).
  4. Remove it from the freezer a few minutes before serving just to allow it to soften a little bit for easy scooping.
  5. Use an ice cream scoop to serve the nice cream.

Topping options:

  • colorful dye-free sprinkles
  • quartered blueberries
  • quartered blackberries
  • diced strawberries
  • mini semi-sweet chocolate chips
  • unsweetened shredded coconuts
  • favorite fruit compote, like blueberry compote
  • favorite spread or jam, like blueberry chia jam
  • melted chocolate

Notes

  • If using a frozen banana, be sure to place it in the freezer the night before (without the peel) to allow it to freeze.
  • If needed, allow the frozen fruit to sit at room temperature for about 5-10 minutes, for it to blend easily.
