Lentils are part of the legume family and are full of nutrients such as:

Step By Step Instructions:
Measure 1 cup of uncooked lentils
Place it in a fine mesh strainer and rinse the lentils by running water over them. Use your fingers to turn the lentils so they all get rinsed evenly.
Place the rinsed lentils in a medium saucepan.
Pour 4 cups of filtered water over the lentils.
Cover the saucepan with a lid and bring the water to a boil over high heat.
Once it starts to boil, lower the heat to low and allow it to simmer for 30-40 minutes or until the lentils are soft.
Note: If you want to add some salt, don’t add it until the end since the salt can make the lentils tough.
To test for doneness, remove a few lentils and put pressure against it with a fork or your finger (when it has cooled slightly). If the lentils are soft, they are done.
Place a mesh strainer in the sink and carefully pour the lentils into the strainer to drain the water.
Place the mesh strainer with the lentils back in the saucepan. This will allow the lentils to cool a little and fully drain the water before placing it in a glass food storage container.
Place the lentils in a glass food storage container, let it cool and store it in the refrigerator.
