7 medjool dates , remove the pits and soak in hot water to soften.
2 tablespoons cacao powder bloomed with 2 tablespoons water from soaking date’s liquid
3 tablespoons of liquid from the soaked dates
Instructions
Remove the pits from 7 dates, transfer the dates to a glass heat-safe bowl, and add hot water to cover the dates. Allow the dates to soak for 5 minutes. This process will help soften the dates which in turn will make them easier to blend/process.
Note: I like to use Medjool Dates with the pits still inside because I find them to be a lot softer. Additionally, I recommend adding about 5-7 dates. We liked the level of sweetness from 7 dates, but we found 8 dates to be a little too sweet for us. But, feel free to add as much or as little as you’d like.
While the dates are soaking, add 2 tablespoons of cacao powder to a small glass heat-safe bowl. Also, add 2 tablespoons of the water from the soaking dates.
Then, mix until the cacao powder has dissolved and a paste-like texture has formed. Set this aside.
To a food processor, add the diced avocado, cottage cheese, the chocolate paste, and the soaked pitted dates. Also, add 3 tablespoons of the liquid from the soaked dates (or may also just add filtered water).
Blend until the mixture is smooth and the dates have pureed as well, stopping to scrape down the sides a couple of times when needed. Add more liquid if you’d like to thin out the mixture some more.
Add desired toppings and enjoy
