Chicken Pizza Sandwich Hearts

These Chicken Pizza Sandwiches are easy to make and are a great way to help use up any leftover chicken you might have. The cheese melts as it bakes in the waffle maker while the pizza sauce and basil helps add flavor. Additionally, the cooked chicken and spinach provide nutrients to the sandwich.

 

Here I used a heart-shaped waffle maker to help achieve this fun look, however, any waffler-maker will do. If you plan on using a heart-shaped waffle maker, just be sure to use a heart-shaped cookie cutter that is the same size as the waffle maker. This way, the sandwich will also fit in the waffle-maker.

 

Sandwich served here with heart-shaped tomatoes, cucumbers and carrots. I also served some pizza sauce on the side for dipping.

Ingredients

  • 2 pieces of sliced bread, (I used organic sprouted wheat bread).
  • 2 slices of provolone cheese
  • pizza sauce
  • small diced basil
  • finely diced spinach
  • shredded cooked chicken

Instructions

The Process:

  1. Grab 2 pieces of bread (I used organic sprouted wheat bread).
  2. Since I’m using a heart-shaped waffle maker, I used a heart-shaped cookie cutter that was about the same size as my waffle maker. This way my sandwich will fit inside the waffle maker.
  3. Use the cookie cutter to cut the bread and cheese.

To build the sandwich :

  1. Place the bread and add the cheese. Spread some pizza sauce and add the diced basil, finely diced spinach, and the shredded cooked chicken. Place another piece of cheese on top of the chicken. Finally, top it with another piece of bread.
  2. Spray both sides with avocado oil
  3. Carefully place the sandwich in the preheated waffle maker , while slowly pushing the waffle maker down with a tong to help compress it a bit.
  4. I also placed a tong on the other end of the sandwich to prevent the ingredients from being pushed out.
  5. Let it grill until the cheese has melted and the top is golden brown.
  6. Carefully remove the sandwich and allow it to cool
