Broccoli Sweet Potato Tots, easy to make

Steamed sweet potatoes with broccoli is one of my kids’ favorite vegetable combinations. As a result, I decided to create a “tater tot” version of that. This recipe was inspired by the ready-to-bake frozen tater tots that are available at the market. I figured, why not make a nutritious version of that. Hence, how this recipe was created.

When creating this recipe, my goal was to add nutritious ingredients and make it an easy recipe. I added almond flour for extra nutrients (and helps add great flavor too) along with garlic and onion powder for extra flavor. Additionally, breadcrumbs may be substituted in place of almond flour and flax-egg in place of the beaten egg (see recipe in the recipe card).

The Broccoli Sweet Potato tots are great to serve as part of a meal with your favorite dip/spread or alongside some protein like chicken.

The Broccoli Sweet Potato tots also taste great when served with your favorite dip like ranch dressing, hummus, or guacamole.

Shredded sweet potato, grated or finely diced broccoli, shredded sharp cheddar cheese, garlic powder, onion powder, almond flour, beaten egg or a flax-egg.

 

Step-By-Step Instructions:

Preheat the oven to 400F

Scrub clean the sweet potato and the broccoli. Also, peel the skin off from the sweet potato and cut its ends off.

Use a box grater to shred the sharp cheddar cheese, sweet potato, and broccoli.

Measure 1/2 cup of the sharp cheddar cheese, 1 cup of the shredded sweet potato, and 3/4 cup of the broccoli.

 

Add the shredded sweet potato, finely diced broccoli, and shredded cheese to a bowl. Mix well with a spoon.

 

Add the onion and garlic powder. Mix well.

 

Add the beaten egg or flax-egg, and mix well.

If using flax-egg (to a small bowl, mix 1 tablespoon of ground flaxseed with 3 tablespoons of filtered water-let it sit for 10 minutes or until it resembles the consistency of a beaten egg).

   

Add the almond flour and mix until the mixture starts to stick together. The mixture should stick together when pressed between your fingers (as shown in the picture).

   

Scoop 2 tablespoons of the mixture into the palm of your hand and squeeze it a few times for the mixture to completely come together/stick together. Form them into tots.

Place them on a baking sheet lined with unbleached parchment paper.

Bake them for 10 minutes. Then, carefully remove and turn each tot over onto its other side and bake for another 10-12 minutes or until cooked through.

Allow to cool and serve.
