Blueberry Mango Smoothie

A tasty and nutritious smoothie that’s made with fruits, a leafy green, and cottage cheese. The smoothie can be served in a bowl with a spoon or in a cup with a straw.

Ingredients

Units Scale
  • 1 ripe banana
  • 1 1/2 cups frozen wild blueberries
  • 2 cups frozen mango chunks
  • 1 cup frozen pineapple chunks
  • 1 tablespoon pumpkin seeds
  • 2 tablespoons walnuts
  • 1 cup water (or may use nut/seed/oat milk) , add more if needed
  • 1 small or medium-sized kale, stem removed
  • 1/4 cup cottage cheese

Instructions

  1. Add all of the ingredients to a blender and allow them to sit for about 5-10 minutes. This will allow the frozen fruits to thaw a bit before blending.
  2. Start the blender off slowly while gradually increasing its speed. Blend for about 1.5 to 2 minutes or until it’s well blended and smooth. I like to use the blender’s stick to try and get the ingredients incorporated or to help keep the ingredients moving/blending.
  3. If needed, stop and scrape the sides or add a bit more water.

Notes

I like to allow my frozen fruits to thaw a bit before blending (allow them to sit for about 5-10 minutes before blending). That way the smoothie isn’t too cold-it’s not completely thawed, just not too frozen. I have found the smoothie is a bit more flavorful that way.
