Apple “Donut” Pancakes

These Apple “Donut” Pancakes are a fun and tasty way to eat apples and pancakes. The apples soften a bit as they cook with the pancake batter and they pair so nicely together too. Furthermore, the apples can be peeled before slicing if desired.

Here I used my Vanilla Cottage Cheese pancake recipe to make the apple “donuts.” However, any pancake batter should work.

Served here with a bowl of Maple Cinnamon Oatmeal (topped with diced walnuts, sprouted pumpkin seeds, and blueberries) and carrots and blueberries. (Please cut fruits and food that are considered a choking hazard appropriately before serving).

Serve these pancakes on their own with a side of fruits and/or veggies. Other options include: served with a side of eggs, favorite jam (i.e. Blueberry Chia Jam), nut or seed butter, etc.

Apple “Donut” Pancakes

These are easy to make and tasty. Here I used my cottage cheese pancake recipe but any pancake batter will do. Also, my Yogurt Vanilla Pancake recipe will pair nicely as well!

Ingredients

  • sliced apples, may peel the skin off before slicing if desired (I used organic Gala apples)
  • pancake batter

Instructions

  1. wash and slice the apple, not too thick
  2.  cut out the core with a pairing knife or a small cookie cutter 
  3.  dunk the sliced apple into the pancake batter , making sure to drip off some of the excess 
  4.  transfer it to a heated and buttered skillet 
  5.  cook on both sides until cooked through 
  6. allow to cool and enjoy on its own, with pure maple syrup, blueberry chia jam or your favorite side
