These Apple “Donut” Pancakes are a fun and tasty way to eat apples and pancakes. The apples soften a bit as they cook with the pancake batter and they pair so nicely together too. Furthermore, the apples can be peeled before slicing if desired.
Here I used my Vanilla Cottage Cheese pancake recipe to make the apple “donuts.” However, any pancake batter should work.
Served here with a bowl of Maple Cinnamon Oatmeal (topped with diced walnuts, sprouted pumpkin seeds, and blueberries) and carrots and blueberries. (Please cut fruits and food that are considered a choking hazard appropriately before serving).
Serve these pancakes on their own with a side of fruits and/or veggies. Other options include: served with a side of eggs, favorite jam (i.e. Blueberry Chia Jam), nut or seed butter, etc.

Vanilla Cottage Cheese Pancakes
Apple “Donut” Pancakes
These are easy to make and tasty. Here I used my cottage cheese pancake recipe but any pancake batter will do. Also, my Yogurt Vanilla Pancake recipe will pair nicely as well!
Ingredients
- sliced apples, may peel the skin off before slicing if desired (I used organic Gala apples)
- pancake batter
Instructions
- wash and slice the apple, not too thick
- cut out the core with a pairing knife or a small cookie cutter
- dunk the sliced apple into the pancake batter , making sure to drip off some of the excess
- transfer it to a heated and buttered skillet
- cook on both sides until cooked through
- allow to cool and enjoy on its own, with pure maple syrup, blueberry chia jam or your favorite side
