Chocolate Avocado Pudding, sweetened with dates

This recipe is such a tasty way to enjoy avocados and a healthier version of the traditional chocolate pudding. The avocado provides a creamy and smooth texture to this recipe, while the cacao powder gives it the chocolatey flavor. Additionally, I have added cottage cheese for some extra nutrients and for some protein- but you won’t be able to taste it! Finally, the dates help provide some sweetness to this recipe. I added 7 dates to my recipe, but feel free to add more or less.

Note: I like to use Medjool Dates with the pits still inside because I find them to be a lot softer. Additionally, I recommend adding about 5-7 dates. We liked the level of sweetness from 7 dates, but found 8 dates to be a little too sweet for us. But, feel free to add as much or as little as you’d like.

Not only does the avocado help provide this smooth and creamy texture, but it also contains heathy fats and fiber (along with many other great nutrients).

Here, my kids requested we add some sprinkles to their chocolate pudding (they’re really into sprinkles now-a-days). It helped make their snack fun and paired nicley with the strawberries and the blackberries. How fun are these dye-free sprinkles?

Note: If serving with fruit, please cut the fruit according to your child’s age to prevent any choking hazards.

1 large Hass avocado, cacao powder, cottage cheese, medjool dates, and water (not shown here).

I like to use Medjool Dates with the pits still inside because I find them to be a lot softer. Additionally, I recommend adding about 5-7 dates. We liked the level of sweetness from 7 dates, but we found 8 dates to be a little too sweet for us. But, feel free to add as much or as little as you’d like.

 

Step-By-Step Instructions:

   

Remove the pits from 7 dates, transfer the dates to a glass heat-safe bowl, and add hot water to cover the dates. Allow the dates to soak for 5 minutes. This process will help soften the dates which in turn will make them easier to blend/process.

   

While the dates are soaking, add 2 tablespoons of cacao powder to a small glass heat-safe bowl. Also, add 2 tablespoons of the water from the soaking dates.

 

Then, mix until the cacao powder has dissolved and a paste-like texture has formed. Set this aside.

   

To a food processor, add the diced avocado, cottage cheese, the chocolate paste, and the soaked pitted dates.

(Image 2): Also, add 3 tablespoons of the liquid from the soaked dates (or may also just add filtered water).

Blend until the mixture is smooth and the dates have pureed as well, stopping to scrape down the sides a couple of times when needed. Add more liquid if you’d like to thin out the mixture some more.

Add desired toppings and enjoy
