These crackers taste just like chickpeas. If you like snacking on chickpeas, you will like these crackers as well. They are easy to make and are a great way to get the kids involved in the kitchen. My son helped me cut out the cute shapes with a small cookie cutter. He had a blast cutting the shapes out and was very eager to try them out as a result. These are great to snack on by itself, with pesto, guacamole, hummus, or your favorite dip, just to name a few

Ingredients
- 1 1/2 cups chickpea flour
- 2 cups packed spinach, washed and completely dried
- 1 tablespoon nutritional yeast
- 2 tablespoons flaxseed meal
- 2 tablespoons Tahini
- 2 tablespoons oil, I used avocado oil
- 1/4 cup filtered water
Instructions
Preheat the oven to 400F
Add flour, spinach, nutritional yeast, and flaxseed meal to a food processor and pulse until the spinach is broken down into fine or smaller pieces.
Transfer the mixture to a bowl and add the Tahini and the oil. Mix it with a fork or a spoon. Then add the water and stir until the mixture is combined.
Place unbleached parchment paper on your countertop, lightly flour it, place the dough, cover the dough with another unbleached parchment paper (on top) and roll the dough out with a rolling pin.
Note: The parchment paper prevents the dough from sticking to the rolling pin which allows the dough to roll out easily.
Roll it out very thin, about 1/8 inch in thickness
Remove the top parchment and cut them into desired shapes
Transfer to a baking sheet lined with unbleached parchment paper
Prick with a fork (which helps prevent the crackers from puffing up)
Bake till crisp and done, about 10-15 minutes
Note: If using a cookie cutter to cut the shapes, you will have extra dough remaining. You may bring the dough together and roll it out in-between parchment papers and repeat the steps listed above until the dough is used up.
