I love making kale chips. They are so easy to make and are a great alternative to regular chips. My son really enjoyed these as a snack. I also served some on the side with his meals. He was loving them.
Also, I like to purchase beets with their greens since those too are full of wonderful nutrients. My grandmother had a great recipe for it which I’ve shared under Grandma’s Beet Leaves Recipe. This time, I thought why not make chips out of them. They turned out very well.

Note: I roasted the kale and the beet greens separately.
Preheat the oven to 275F
Line a baking sheet with unbleached parchment paper
Tear the leaves(washed and dried) into 1-1.5 inch pieces and place them on the baking sheet.
Drizzle some oil, I used avocado oil. A small amount of oil is all that’s needed. Just enough to lightly coat the greens.
Sprinkle seasonings of choice, I used 1/8 teaspoon each of onion powder and garlic powder
Give it a good toss
Line them in a single layer making sure they aren’t overlapping.
Roast it in the oven until they are crisp, can take about 20-25 minutes.
Let them cool and enjoy
